How to Brew with a Clever Dripper

Freshly roasted coffee
Mug or jug
Spoon or stirrer
Burr grinder (freshly ground is best)

Kettle (temperature variable gooseneck is best)

Scales

And here are the steps:

Step 1 – Prepare the brewer.

Pop a filter paper in the brewer. Place on top of your mug. Boil the kettle and pour boiling water around the filter. This will rinse the paper and warm the brewer and mug.

Step 2 – Add the coffee.

Remove the brewer from the mug and measure and grind your beans. Start with a ratio of 60 – 70g per litre, so say 20g of coffee for 300ml water. You can adjust up or down a little to get a strength you enjoy best. Grind on a coarse grind (similar to a french press), the coffee should look visually gritty, granulated sugar texture. Place in the filter paper and shake to level.

Step 3 – Add the water.

The ideal brewing temperature is between 91-96°C. Aim close to 96°C or around a minute or so off the boil, as the temperature will continue to drop during brewing. Place the brewer on the scales and tare. Start your timer and carefully soak all the coffee grounds with hot water by pouring in a steady circular motion. Continue to fill to 300g then gently stir for around 10 seconds, being careful not to damage the filter paper. Place the lid on top, total brew time is three minutes.

Step 4 – Drip and enjoy.

Empty your mug of the warm water and place brewer on top. The brewed coffee will start to filter through. This should take a further minute or so. Remove the brewer, pop filter and grounds into the compost and rinse out the brewer.
