  • Location

    The APROCASSI cooperative is located high up in the Andes mountain range in the Cajamarca province of Peru. Historically part of the Inca empire, this region also has areas with a strong tourism economy. A sub-tropical climate, fertile soil and a mild rainy season make it very well suited to high quality arabica production.

  • Farm

    The cooperative is made up of 452 farmers. It was established in 2000, when the smallholder farmers decided to band together and obtain Fair Trade and organic certification. They have invested heavily in worker training to improve the quality of their coffee crops and have also allocated a proportion of their land to the production of other crops for diversification.

  • Processing

    The farmers have small individual facilities where they de-pulp, ferment and dry the coffee themselves. Fermentation is between 13-18 hours, and drying takes 12-20 days. All lots are then evaluated for quality before becoming part of the APROCASSI communal blend.
